New Mexican restaurant has been in works for Leitchfield for nearly five years

It has been almost five years in the making, but thanks to customer demand, Los Mexicanos will open its doors in Leitchfield sometime in May.

Los Mexicanos Owner Deidra Roman said she was very excited about staking claim in Grayson County as a new business owner. "We have been looking at the area for four or five years," Roman explained. "We have speaking with Carter Harrell (State Farm Insurance) for over a year about opening a restaurant. A lot of our customers at the Beaver Dam location are from here. They have been after me for sometime to come to Leitchfield. It just took us finding the right place to open the business.”

This is the second location for the couple (Angel and Deidra Roman) to open together. But Angel's family has been involved with the Mexican restaurant trade for sometime.

"My husband has been cooking since he was 15-years-old," Roman said. "He got me addicted to it. The difference between the two locations is that Leitchfield will have a charbroiled grill in it, and we will offer more plates at the Leitchfield location."

Some of the other highlights of the new establishment will be plasma televisions, a private-meeting room (for parties, public gatherings, meetings, etc.) a mostly-open floor plan and top-notch bathrooms.

"That is a pet peeve of mine," Roman laughed. "The contractor and myself agreed the bathrooms had to be super nice. We also wanted to have an area in the restaurant for people to use for private parties. I think it is a needed room. The one at the Beaver Dam location is reserved quite often. As long as people eat in the restaurant, there is no charge to use the room. It is going to be an overall family-type atmosphere. We want people to feel welcome and cozy when they come in."

Roman assured, even though it is a Mexican restaurant, the business will be serving a variety of foods for customers; steak, chicken, shrimp, tilapia, baked potato, salad, etc.

Staffing for the restaurant has already been filled, but Roman does plan on hiring additional part-time help in the near future.

"All positions have been filled," Roman advised, "but as soon as we get in there, and figure which days are the busiest, then I will hire other part-time help. For right now we will be having a lot of Angel's family helping out with getting the business going. It takes two to three months just to train a Mexican cook. We cook over 200 different plates on the menu. Plus, when we start serving alcohol, we will stay open later."

The restaurant will be located off of Elizabethtown Road, adjacent to Walmart. Hours of operation for the location will be Sunday through Thursday from 11 a.m.-9 p.m., and Friday and Saturday from 11 a.m.-10 p.m.
