Weigh Down Grayson County: One last meeting

We had our last Weigh Down Grayson County meeting Monday, March 22, which was a little sad because several of us have been supporting each other in the "flab fight" since October last year.

It was also a great night of discovering new, healthy recipes (which I will share below) and the beginning of new opportunities.

One opportunity is to join the newly formed Grayson County Walking Club.

It started as an idea between the Grayson County Health Department, Community Education and the UK Extension office and was quickly picked up by the Weigh Down classes as a chance to get together with our support team and do something healthy.

The club will meet on Mondays and Wednesdays at the Beville City Park at 12:30 p.m. starting May 3.

The scales will be available one day for those interested in weighing each week.

Weigh Down Grayson County classes may start again in the fall of the year and will be announced in the Datebook of the News-Gazette.

Egg Salad Delite

Ingredients:

1 boiled egg

3 Tbsp fat-free cottage cheese

1 slice red pepper

1 slice green pepper

1/2 stalk of celery

2 baby carrots

1 slice wheat bread or crackers

Mix ingredients together and serve.

  • From Rose Fort

    Apple Sweet Sweet Potatoes

    Makes 8 servings

    Ingredients:

    3 large sweet potatoes

    3/4 cup water

    3 medium apples, cored

    1 cup unsweetened apple juice

    2 Tbsp cornstarch

    3 Tbsp unsweetened apple juice

    1 Tbsp honey

    1/4 cup wheat germ

    1/4 cup graham cracker crumbs

    Cook whole sweet potatoes in water until tender, about 20 mins. Peel and slice lengthwise about 1/2 inch thick. Layer slices in a 2 quart casserole dish. Top with apple slices.

    In a saucepan, bring the cup of apple juice to a boil. Dissolve the cornstarch in the 3 Tbsp of apple juice and add to other apple juice. Pour over the apples and sweet potatoes.

    Combine the wheat germ and graham cracker crumbs and sprinkle on top of casserole.

    Bake at 350 degrees for 45 minutes or until apples are fork tender.
